We are in the middle of salad season. When the sun is shining and the temperatures are pleasant, a delicious salad can still taste. A tasty combination of seasonal vegetables with a fresh dressing, delicious!

You probably already know that I am not a fan of ready-made dishes or products, that also applies to dressing sauce. It's easy to buy sauces at the supermarket, but dressing is often full of added sugars and flavorings. You ruin that oh-so-healthy salad with an unhealthy sauce that often costs a lot of money…

That's why I make my dressing myself! It is really super simple to make your own sauces and also much healthier and cheaper. I usually make a large portion because you can store the leftovers in the fridge for up to 2 weeks. Be sure to try it yourself!

Ingredients for the dressing

  • 3 tablespoons of water
  • 1 tablespoon of matcha
  • 2 tablespoons miso paste (this is Japanese soybean paste, which you can also find in the supermarket these days)
  • 2 tablespoons of lemon juice
  • 1 tablespoon olive oil (extra virgin)
  • 2 tablespoons of red wine vinegar

Salad dressing sauce

Preparation

  • Assemble your salad. I chose lettuce, tomatoes, feta, chickpeas and carrots.
  • Mix the miso paste and water. Then add the matcha powder little by little. If you add it slowly, no lumps will form.
  • Then blend the mixture until smooth.
  • Then add the lime juice, olive oil and red wine vinegar. Mix it well so that there are no lumps in the mixture.

Then you only have to do one thing: enjoy! Tip: don't put the dressing on the salad until the last minute, so that it stays crunchy.
