The sweet taste of caramelized pineapple goes perfectly with the fresh taste of homemade matcha lime yogurt and the pink pepper gives it a spicy touch.

This was really appreciated at our house, and I would like to share this delicacy with you.

What do you need?

(For 2 people)

For the matcha lime yogurt:

  • 400 grams of Greek yogurt
  • 1 teaspoon matcha powder
  • Grated zest and juice of ½ lime

For the caramelized pineapple:

  • 20 grams of butter
  • 200 grams pineapple (fresh)
  • 1 tablespoon of coconut blossom sugar
  • 250 milliliters of sake

toppings:

  • Fresh mint
  • 2 teaspoons of pink peppercorns
  • 2 teaspoons of linseed

The preperation

  1. We first make the matcha-lime yoghurt by combining the yoghurt, matcha powder, lime zest and lime juice. You can do this completely according to your own taste.
  2. Melt butter in a pan over medium heat. Sprinkle the pineapple with coconut blossom sugar and place in the pan (as soon as the butter is hot.)
  3. Grill the pineapple on both sides until golden brown, make sure they are well caramelized.
  4. Then add the sake and flambé it. (This step is optional, so you don't necessarily have to buy sake.)
  5. Place the pineapple on a plate with the yogurt and fresh mint. Then sprinkle some peppercorns and linseed on top. PS: you can also replace the yogurt with a scoop of vanilla ice cream, so you have two delicious desserts.

Another tip: you can also combine the matcha lime yogurt with other things. For example, eat it with some fresh fruit for a good start to your day.
