And no, such a salad does not have to be boring at all. Add a fresh, homemade dressing and you immediately have a lunch full of flavour. The ready-made supermarket sauces often contain a lot of sugar, which of course makes the salad a lot less healthy… So home-made is always better, because you know exactly what the ingredients of the sauce are.

You can prepare this dressing with matcha, avocado and lime in just 5 minutes and you don't need much.

Salad dressing

Make your salad dressing yourself: these are the ingredients

  • 4 teaspoons of matcha
  • 1 avocado
  • 2 teaspoons of honey
  • 2 limes
  • A handful of parsley
  • 10 tablespoons yogurt (here it's best to choose Greek yogurt)
  • About 15 tablespoons of water (if you like a very liquid dressing, add a few extra tablespoons of water)
  • 4 tablespoons of olive oil
  • Pepper and salt

The preperation

Mix the pieces of avocado with the yoghurt, honey, olive oil, matcha powder, lime juice and water. Keep mixing until a smooth mass is formed. Then add some parsley, salt and pepper and stir well.

Couldn't be easier. :-)

Why this dressing is so healthy

Yoghurt is the ideal base for any sauce because it is low in calories. The avocado is full of healthy fats and matcha powder is a source of antioxidants. If you combine these ingredients you get a delicious dressing that is also good for you.
