Pancakes, I love them. Who not?
Pancakes form a good basis and are always possible. They are prepared very quickly and you can eat them hot or cold. Perfect for summer and winter.
But not all pancakes are good for your figure. Fortunately, there are plenty of healthy ways to conjure up a delicious pancake on your plate.
This is how Deborah from Debby The Chocoholic went to work with our matcha and conjured up these delicious vegan matcha pancakes on the table in no time. Debby's pancake recipe is also lactose free.
Lets eat!
Ingredients vegan matcha pancakes
for about 8 matcha pancakes (1 person)
- 35g oatmeal
- 1 ripe banana
- optional 1 egg (non-vegan)
- 100ml vegetable milk
- 1 to 2 tsp Matcha powder
- 1 tsp vanilla essence or sugar
- 1 tsp baking powder
- coconut oil for frying
For the toppings (optional)
- strawberries or other fruit
- coconut grater
- agave syrup (or honey for non-vegans)
Preparation vegan matcha pancakes
- Grind the oatmeal in a blender or food processor into flour. Pour it into a bowl and set aside
- Put the banana, egg, vegetable milk and vanilla essence in the blender and mix to a smooth batter
- Now add the dry ingredients incl. the oatmeal and mix again into a nice batter
- If the batter is too thick, add some extra milk or water
- Heat a frying pan and melt some coconut oil in it
- Spoon the batter into the frying pan and make small rounds of it
- Fry on one side until bubbles form on top and flip over
- Continue like this until the batter is used up
- Stack the pancakes on a plate and garnish the matcha pancakes with pieces of fruit. Finish with some coconut grater
- Tasty!
