We are really fond of poké bowls at home. It is the way to eat more fruit and vegetables and you can experiment with colors and flavors. The more colors on your plate, the healthier, because every color of fruit/vegetable has its own health benefits. A poké bowl, that is always an energy bomb for your body.
This time I opted for a delicious poké bowl with salmon, mango, lots of vegetables and a delicious homemade matcha mayonnaise. A successful combination, if I do say so myself. :-)
What do you need for this poke bowl?
You determine the quantities yourself. Are you going for a small bowl, or rather a large portion? For this bowl I used the following ingredients:
- Smoked salmon
- Edamame beans
- Avocado
- Red cabbage
- 1 mango
- Brown rice (because that is a lot more nutritious than white rice)
- Cucumber
- Radishes
- A handful of cilantro
- Lime
We make the mayonnaise ourselves, because it tastes so much better than the ready-made mayonnaises from the supermarket. For the matcha mayonnaise you need the following ingredients:
- 1 egg yolk
- 1 tablespoon of vinegar
- 1 teaspoon of matcha
- 1 teaspoon Dijon mustard
- 250 ml vegetable oil (such as sunflower oil)
- Seasoning: salt and pepper
- Optional: the juice of ½ lime to freshen it up.
Preparation
Only one rule applies here: make your plate a party! Cut all vegetables and decorate your bowl. You can make rolls with the cucumber and you can cut the radishes in a fun way, so that bowl also looks extra special. :-)
How to make the matcha mayonnaise:
- First add the egg yolk to a mixing bowl and beat it with a whisk. Then add the mustard, vinegar and matcha powder and beat again until smooth.
- Then add the oil.
- Optionally, you can add some lime juice for a fresh taste.
- Then add salt and pepper.
Then add some mayonnaise to your bowl and you have a colorful and especially healthy plate.
