A Christmas cake : it is one of the most typical desserts served on Christmas. Although there are plenty of options at the bakeries or supermarkets, I love making my Christmas cake myself. Homemade always tastes that little bit better, especially when the cake comes out of the oven perfectly. 😋 Are you still looking for a festive recipe with an original touch? We work in 3 steps: first we bake the cake, then we make the pastry cream with matcha (as a filling) and then the butter cream with matcha to decorate the cake.

Ingredients for the pastry

  • 4 eggs
  • 250 grams of self-raising flour
  • 160 grams of butter
  • 2 packets of vanilla sugar

Ingredients for the pastry cream (filling)

  • 1 teaspoon of matcha
  • 1 liter of milk
  • 4 eggs
  • 100 to 150 grams of sugar
  • 50 grams of vanilla flour
  • 50 grams of flour
  • 1 pack of vanilla sugar

Ingredients for the butter cream (topping)

  • 1 teaspoon matcha powder
  • 250 grams of butter
  • 250 grams of sugar
  • 1dl water
  • 2 egg yolks

Preparation

How to make the cake:

  1. Add the sugar, egg yolks and butter to a bowl and mix until smooth.
  2. Sift the flour and add it to the mixture.
  3. Beat the egg white until stiff and add it to the mixture.
  4. Take a baking tin, butter it and sprinkle it with flour.
  5. Put the dough in the baking tin and let it bake.
  6. A tip: insert a knitting needle and watch until nothing sticks to the needle, so you know that the cake is fully baked.

Here are the steps for the pastry cream filling:

  1. Beat the eggs together with the sugar until foamy.
  2. Stir in the flour, add a portion of the boiling milk while stirring and let it boil again, stirring continuously.
  3. Add the matcha powder as the last step and your filling is ready!

Making the buttercream for the topping:

  1. Boil the sugar together with the water until you get a syrup.
  2. Let cool and then add the egg yolks.
  3. Beat the whole airy, stir the butter until cream is formed and add the cold mixture in small amounts.
  4. Add the matcha.
  5. Keep stirring until you get a nice glossy mixture.

When you have made the cake, let it cool down first. Meanwhile, make the pastry cream and butter cream. When the cake has cooled down, cut it in half so that you can fill it with the pastry cream. Finish off with the butter cream and possibly some powdered sugar.
