At the local trendy bars you will increasingly find matcha latte on the menu. This drink is therefore extremely popular, but you can actually make much more with matcha. Baking with the green tea powder is easy and delicious. And it adds an original twist to every dish!

From main dishes to drinks, smoothies or desserts: matcha can be used in many dishes. Today I'm sharing a recipe with which you can bake delicious matcha macarons yourself!

Macaron: the most popular cookie in Paris

In Paris they love it, in a short time this cookie became really super popular. But how could it be otherwise, macarons are a real sweet delicacy! And the eye also wants something, the perfect macaron looks like a beautiful painting.

These green matcha macarons consist of almonds and butter cream. You can also fill them with white chocolate ganache because did you know that matcha is really delicious in combination with white chocolate? A must for chocolate lovers!

Green matcha macaroons

Recipe (​for about 30 macarons​ )

Ingredients

For the cookies

175 grams of powdered sugar
175 grams of ground almonds
1 teaspoon matcha powder
175 grams of granulated sugar
4 egg whites
50 ml of water

For the buttercream

125 grams of unsalted butter
125 grams of powdered sugar
1 tablespoon of milk
1 tablespoon of matcha

Tip: you can also make the macarons with chocolate ganache. For this you need 120 grams of white chocolate, 100 ml full cream, 25 grams of butter and 2 tablespoons of sugar.

Preparation

  1. Add the almonds, icing sugar and matcha powder to the food processor. Mix until everything is finely ground. Then sieve the mixture and grind the large remaining pieces again.
  2. Then add 2 egg whites and mix until it is a thick substance.
  3. Place the other 2 egg whites in a heatproof bowl and set aside.
  4. Grab a small pan, fill it with water and the granulated sugar. Put on a medium heat and stir until the sugar is completely dissolved. Bring the substance to a boil until the thermometer reads 110 degrees.
  5. Beat the egg whites on the highest setting. Remove the pan from the heat as soon as the thermometer reads 118 degrees. Add the substance to the egg whites in a thin stream and then beat the mass until the egg white is stiff.
  6. Then add half of the egg whites to the mixture of matcha and almonds. Mix for a few seconds. Then fold in the rest of the egg whites. Keep scooping until the mixture is smooth.
  7. Place parchment paper on 2 plates.
  8. Put the meringue mixture in a piping bag and make circles with a diameter of about 3.5 centimeters on the paper. Put the baking sheet aside for 30 minutes and meanwhile preheat the oven to 170 degrees.
  9. Bake the macarons for about 12 to 14 minutes, make sure they are firm. Let the macarons cool.
  10. Make the matcha buttercream, you do this by beating the butter creamy and add the matcha and icing sugar. Then add the milk and keep mixing until smooth.
  11. Stick two macarons on top of each other with some buttercream in between.
  12. Store the macarons in the refrigerator.

There you go, your delicious macarons are ready!
