Supplies
- 4 eggs
- 1 tablespoon of yogurt
- 1 teaspoon matcha powder
- Grated zest of ½ lime
- 10 grams of butter
- 1 teaspoon of olive oil
- A pinch of salt
- 50 grams mozzarella, feta or goat cheese
- A handful of herbs (I used parsley and coriander this time, but you can also experiment with basil, dill and chives)
- A number of tomato cubes
How do you make the omelette?
- Break the eggs into a bowl and then add the matcha powder, the yogurt, the lime zest and some salt. Use a beater to mix everything well.
- Take a pan and put it on a high heat. When the pan is hot, add the butter and oil.
- Add the egg mixture. Allow the sides to puff up and use a spatula to fold in the edges (this will allow some of the raw egg to spill out).
- Sprinkle the omelette with the herbs and add the mozzarella (you can also use goat cheese or feta).
- Fold the omelette when it is cooked (make sure that the center is still slightly runny) and place it on a plate.
- Finish with some tomato cubes and possibly some extra herbs.
