Whether you're looking for tasty breakfast recipes that also provide hours of energy, or a snack that gives you a boost: these matcha power pots with chia and figs always taste good.

Chia seeds may be small, but they are packed with antioxidants, protein, fiber and healthy fatty acids. In addition, they absorb no less than 9 times their own weight in water, and because of that volume they give you a long-lasting feeling of satiety. Combine this with matcha powder and you have a super healthy snack! In addition, you can easily make them the night before, which saves you a lot of time in the morning.

The ingredients for these matcha power pots:

(For 4 persons)

  • 8 tablespoons of chia seeds
  • 5 dl unsweetened almond milk
  • 2 teaspoons of matcha powder
  • 1 tablespoon honey (liquid)
  • 3 figs
  • 2 ripe pitted peaches (cut into small pieces)
  • 4 tablespoons of Greek yogurt
  • 4 tablespoons chopped nuts (you choose this yourself: hazelnuts, almond nuts, pistachios,...)

How do you make these power pots?

  1. Take a bowl and add both the chia seeds and the almond milk.
  2. Use a separate bowl to stir together the matcha powder and honey.
  3. Add the matcha honey mixture to the chia mixture. Then add the peach pieces and stir well.
  4. Divide this mixture over 4 jars. Cover them with a lid or plastic wrap.
  5. Place the jars in the refrigerator overnight. This way the chia seeds can absorb all the moisture. The jars are only ready when they have a firmer structure.
  6. The next day, take a jar out of the fridge and add a spoonful of yoghurt, the chopped nuts and the figs.
