There's nothing better than starting a cold morning with a warm bowl of oatmeal. Such a breakfast warms you up, it is incredibly nutritious and gives you energy for hours.

The ideal start to your day!

Another big advantage: overnight oats are easy to make the night before, because they keep well in the fridge all night.

That will save you a lot of time in the morning.

This recipe for overnight oats with coconut, banana, berries and matcha is a firm favorite in our house. I bet you will like it too. :-)

What do you need for this delicious oatmeal?

That is actually very simple:

  • 40 grams of oatmeal
  • 100 ml coconut milk
  • 1 tsp Golden Matcha
  • 1 teaspoon maple syrup
  • 100 ml of water
  • For the topping: blueberries, blackberries, banana, pumpkin seeds and possibly coconut flakes

A little tip: this is the amount for one serving. You can of course also make several portions at once and store them in the fridge, or even in the freezer. At the time itself you can then alternate with other fruit, so you always have variation in your breakfast.

How are you?

That is also very simple.

  1. Mix the oatmeal with the coconut milk, together with the water, the maple syrup and the matcha powder. Then put it in the fridge overnight. Of course you can also choose to prepare it yourself on the day.
  2. The next day you can eat it cold or put it in the microwave if you prefer to eat your oatmeal warm.
  3. Then pimp it with fruit of your choice. I chose banana, blueberries, blackberries and pumpkin seeds. But you can also finish with a handful of nuts, coconut flakes or other fruit.

That's it: a quick, nutritious and delicious breakfast. Enjoy it!
