Preparation: 75 minutes – number of people: 6

What do you need?

Mascarpone cream

  • 3 egg yolks
  • 50 grams of sugar
  • 250g mascarpone
  • 250 ml of cream
  • 2 leaves of gelatin
  • 10 g matcha powder

Matcha cake

  • 100 grams of flour
  • 1 tbsp baking powder
  • 1 pinch of salt
  • 3 tbsp milk
  • 1 tbsp vanilla extract
  • 10 g matcha powder, +1 tbsp extra for finishing
  • 4 egg whites
  • 12 tbsp sugar
  • 4 egg yolks
  • 60 grams of butter

Preparation:

  1. Beat the egg yolks with the sugar with a mixer in a warm water bath until you have a light yellow, airy mass.
  2. Beat the mascarpone until fluffy. Fold 1/3rd of the egg-sugar mixture into the mascarpone. Then add the rest. Whip the whipped cream and fold through the mass.
  3. Soak the gelatin in cold water. When the leaves are limp, warm them up in a pan with a little water at the bottom. Mix this into the mixture.
  4. Divide the mascarpone mixture into two bowls. Dissolve the matcha powder in 1 tablespoon of water. Mix this under 1 of the mascarpone mixtures. Refrigerate both bowls.
  5. Preheat the oven to 175 °C. Sift the flour and baking powder into a bowl and add the salt.
  6. Mix the milk, vanilla extract and matcha powder in a separate bowl.
  7. Beat the egg whites with 6 tablespoons of sugar. Also beat the egg yolks with 6 tablespoons of sugar. Fold the egg whites into the egg yolks. Carefully fold in the flour.
  8. Add some of the egg mixture to the milk, mix and pour the whole back into the eggs and spatula together.
  9. Melt the butter and add in 2 times.
  10. Pour the cake mixture into a baking tray with raised edges and bake for 12 minutes.
  11. Cut the cake in 2 and place 1 part in a mold. Add the mascarpone mixture with the matcha powder. Place the second part of the cake on top and add the second part of the mascarpone. Let set in the fridge for at least 4 hours. Finish by sifting 1 tablespoon of matcha powder over the tiramisu.

  • 2 cups of almond nuts
  • 2 cups unsalted cashews
  • ¾ cup coconut flakes
  • 3 tbsp vanilla protein powder
  • ¼ cup of rice syrup
  • ½ cup pure maple syrup
  • 2 tbsp coconut oil
  • ½ cup of pure cocoa
  • ½ tbsp cinnamon
  • 1 tbsp vanilla

Preparation:

  1. Mix all ingredients together in a blender and blend for 3 to 4 minutes.
  2. The mixture will look crumbly, take a little in your hand and press it together. If the mixture falls apart, you can mix it for a few more minutes.
  3. Once the mixture is ready, you can press it into balls (about the size of a tablespoon).
  4. Then you roll the balls in the cocoa, coconut or matcha powder. Store them in the refrigerator.

3. Matcha white chocolate shavings with coconut and raspberries

These matcha white chocolate shavings are really worth trying! And they are not only tasty, they also look beautiful.

Ingredients:

  • ½ kg white chocolate finely chopped.
  • 3 tbsp matcha powder
  • ½ cup frozen raspberries, lightly crushed
  • ⅓ cup unsweetened coconut flakes

Preparation:

  1. Place a small casserole dish with a few inches of water over a high heat until the water barely boils. Switch to a low heat to keep the water just below boiling.
  2. Place a bowl in the water and add ¾ of the finely chopped chocolate. Stir in the chocolate until completely melted.
  3. Remove the bowl and add the rest of the chocolate until it is also melted.
  4. Now also add the matcha powder to the chocolate, use a sieve to prevent lumps. Stir until you get a homogeneous mass and an even color.
  5. Add half the raspberries and half the coconut flakes to the melted chocolate.
  6. Spread the mixture on a baking tray lined with parchment paper. Sprinkle the rest of the raspberries and coconut flakes on top, pressing them down gently to make sure they are covered in the chocolate.

Let cool for two hours at room temperature or twenty minutes in the refrigerator. Then cut the mixture into the desired amount of shavings and serve at room temperature.

Ingredients:

  • 30 g gelatin powder
  • 4 tbsp water
  • 3 egg yolks
  • 1/2 cup of sugar
  • 1 tbsp cornstarch
  • Pinch of salt
  • 1 1/4 cup of milk
  • 1 tbsp matcha
  • 1 tbsp brandy
  • 1 cup fresh cream
  • Strawberries, grapes or other fruit
  • Syrup

Preparation:

  1. Mix the gelatin and water in a bowl, place it in a pot of warm water and mix until the gelatin is completely dissolved.
  2. In another bowl, mix the egg yolks, sugar, cornflour and salt and stir until well combined.
  3. Heat milk over low heat until lukewarm.
  4. Mix the matcha with two tablespoons of lukewarm milk and stir to a homogeneous mass. Set these aside.
  5. Add the rest of the milk to the egg yolks and heat over a low heat, being careful not to let the milk boil over while the egg yolks set. Remove them from the heat and let them cool.
  6. Mix the gelatin with the matcha paste and the milk, add a little brandy.
  7. Whip the cream and add it to the mixture. Pour into individual glasses and refrigerate until stiff.
  8. Serve with your favorite fruit or syrup.
