The Italians are known for their delicious desserts. One of those Italian classics is undoubtedly tiramisu, a dessert based on mascarpone, coffee, sugar, eggs, Italian sponge fingers, cocoa powder and a splash of liquor (marsala wine or amaretto). The drink is optional, but most recipes contain some.

There are so many variations of this recipe, because every Italian mom has her own recipe. I didn't go for the classic recipe, but I came up with a special recipe for you. One with green tea and red fruit, because that gives your plate a summery touch.

And if I do say so myself, this variant is amazingly delicious, one that you always score with!

Summer tiramisu

Ingredients

  • 3 teaspoons of matcha powder
  • 400 grams of fruit (this recipe uses a combination of peach, pineapple, blueberries and strawberries)
  • Protein of 2 eggs
  • 90 grams of sugar (you can also replace it with another sweetener)
  • 1 teaspoon vanilla extract
  • 500 grams mascarpone
  • 250 ml of warm water
  • 200 grams ladyfingers

How do you make this tiramisu?

  1. Add the egg white, sugar and vanilla extract to a large bowl. Mix until smooth.
  2. Then add the mascarpone and mix again.
  3. Boil the water, then let it cool down (it should not boil). Add the matcha powder to a bowl and add a little water. Beat the whole thing gently with the bamboo beater. Then pour all the water into the matcha. Let it cool.
  4. Dip half of the ladyfingers in the matcha tea and place them on the bottom of a bowl.
  5. Pour half of the mascarpone mixture over it and add half of the fruit.
  6. Repeat steps 4 and 5 with the other ladyfingers and the mascarpone.
  7. Sieve a layer of matcha powder on the tiramisu and add the other fruit.
  8. Put it in the fridge and let it set for at least 2 hours.

The hardest part about this recipe? Wait until the tiramisu has set in the fridge, because it looks delicious. It really is a finger licking tiramisu.
