You prefer to start the day with a nutritious breakfast that will give you hours of energy. And that doesn't always have to be complicated. :-)
With yogurt, matcha, some fresh fruit and toppings such as almonds and pumpkin seeds you immediately have a delicious breakfast.
Such a bowl is really a vitamin bomb, good for a productive day!
What do you need for 1 portion?
- 1 tablespoon almonds with skin
- 1 tablespoon of pumpkin seeds
- 1 tablespoon coconut flakes
- 125 ml yogurt
- 1 level teaspoon of matcha
- ¼ teaspoon zest of an organic lemon or lime
- 1 fig
- 1 tablespoon acacia honey
How are you?
(Preparation takes 5 minutes, preparation less than 10 minutes)
- Preheat the oven to 180 degrees Celsius.
- Roast the almonds, pumpkin seeds and coconut flakes in the oven for 7 to 10 minutes. You can possibly do this the night before. Toasting is optional, but it does add a crunchy touch to your breakfast.
- Mix the yogurt with the matcha in a bowl.
- Beat vigorously with a whisk and add the lime zest.
- Stir well and finish with fig pieces, the almonds, pumpkin seeds, coconut flakes and some honey.
Fig and yogurt, that's a match made in heaven. Such a bowl is not only super tasty, it gives you enough energy to get through the day productively.
