What do you like to eat in the morning? There are so many ready-made options in the supermarket such as granola, muesli or cornflakes. Now I recently read that most breakfast cereals are not that healthy, because a lot of sugar or salt is often added. Those oh-so-healthy products are actually not healthy at all…

You can already hear me coming. :-) So I went to work myself and bake my granola all by myself. That is really not difficult, and so you immediately have breakfast for several days. Homemade is always the tastiest and so much healthier!

You can add this crunchy granola to yogurt, in oatmeal or take a jar to work. A healthy snack that boosts your energy level!

matcha granola with berries

Supplies

(for a large pot of granola of about 1 liter)

  • 50 grams of almonds
  • 50 grams of sunflower seeds
  • 50 grams of hazelnuts
  • 250 grams oat flakes
  • 2 teaspoons of matcha
  • 2 tablespoons of coconut oil
  • 5 tablespoons of maple syrup
  • 1 teaspoon vanilla
  • ½ teaspoon of salt
  • Some blueberries or red fruit
  • Yogurt

Preparation

  1. Preheat the oven to 160 ºC and line a baking tray with baking paper.
  2. Heat the coconut oil in a pan on the stove until the mixture is liquid. Then mix in the nuts, oat flakes, seeds, seeds, vanilla and salt.
  3. Stir in the maple syrup well.
  4. Spread the mixture evenly on the baking sheet, make sure it is not too thick.
  5. Bake the granola for about 20 minutes. After ten minutes, stir the mixture once so that it does not burn.
  6. Let the granola cool down. Tip: you can add dried fruit such as apricot, cranberries or banana.
  7. After cooling, stir the matcha powder into the granola. The powder does not go into the oven so that the healthy substances are preserved.
  8. Fill a bowl with yogurt, granola and possibly some fresh fruit such as blueberries.
