Baking with avocado? It may sound strange, but you can use avocado in desserts. It is a healthy alternative to butter and cream and is therefore often used by chefs such as Sandra Bekkari and Steffi Vertriest.
Don't like the taste? Don't worry, avocado has a subtle taste that you definitely don't taste in desserts. Pancakes, chocolate mousse, cookies or even chia pudding, you can really make so much with it!
This avocado matcha chia pudding is ideal as a quick breakfast or snack. The chia seeds and avocado provide a saturated feeling so that you can continue for a few hours!
Supplies
(For 5 servings)
- 2 cups of almond milk
- 2 cups of coconut milk
- 2 ripe avocados
- 1 tablespoon of matcha powder
- 4 tablespoons of maple syrup
- Vanilla extract
- 12 tablespoons of chia seeds
- A pinch of salt
- Topping: banana slices and almond flakes
Tips:
- Use ripe avocados.
- The ratio between the chia seeds and liquid must be right. You count 3 tablespoons of chia per cup of liquid because the seeds absorb an enormous amount of moisture (up to ten times their own weight!)
How do you make this chia pudding?
- Add everything (except the chia seeds) to a mixer and blend until smooth.
- Transfer the mixture to clear jars and add the chia seeds.
- Mix well, otherwise the seeds will not be able to absorb enough moisture.
- Then leave in the refrigerator for at least 4 hours or overnight.
- When serving, add some banana slices and flaked almonds.
Why avocado and chia are so healthy
Avocado and chia are real superfoods: they are packed with vegetable, healthy fats. The seeds contain omega 3 fatty acids, iron and protein. Because they contain a lot of fiber, they give you a long feeling of satiety. Combine this with the many health benefits of matcha, and you know that this dish is really super healthy. :-)
Desserts don't have to be unhealthy, this chia pudding is super tasty and only good for you!
