Pumpkin spice latte is one of the reasons so many people look forward to fall. When the first leaves fall from the trees, this well-known drink is back on the menu of Starbucks and other coffee bars.

Fortunately, you don't have to go to a coffee bar for the real one, you can easily make the drink yourself. I made this delicious pumpkin spice matcha latte, a healthier variant that is also vegan! Matcha makes this drink even healthier and it provides an original twist.
Vegan, what is that right?
Vegan means that only vegetable ingredients are used. For example, vegans do not eat eggs, honey, meat/fish or milk. Starbucks pumpkin spice latte is not vegan because it is made with regular milk.
This recipe is vegan, it only contains vegetable ingredients and is therefore completely suitable for vegans!
Ingredients (for 1 cup)
- 200 ml vegetable milk (e.g. almond or hazelnut milk)
- 1 tsp pumpkin spice or gingerbread spice (and some extra for topping.)
Pumpkin spice is an American spice mix, so you won't find it everywhere in the supermarket. Can't find it in your local supermarket? Then use gingerbread spices because it contains almost the same spices as pumpkin spice ( cinnamon, ginger, cloves, nutmeg and allspice.)
- 2 tablespoons pumpkin puree, you can buy this ready-made or make it yourself.
- ½ teaspoon vanilla extract
- 1 teaspoon of matcha
- 1 cup of espresso
- A splash of boiling water
Preparation
- Bring water to a boil. When it boils, let it sit for 30 seconds.
- Add the matcha powder to a bowl and then add the water. A small splash is enough.
- Beat the mass with the bamboo beater, make sure there are no lumps left.
- Pour the mixture into a cup.
- Mix the pumpkin puree with the spices and vanilla extract. Pour in the espresso and then add it to the cup.
- Heat the milk, you can then pour it into the pumpkin mixture or use a milk frother if you like a foam layer.
- Add some pumpkin spice or gingerbread spices as a finishing touch.
