The tune of the ice cream truck and children walking behind the ice cream man with a big smile, it still gives a summery feeling. For children, an ice cream is part of good weather, unfortunately most ice creams are full of sugar. We all love ice cream but not the calories that come with it...

Do you still want a healthy alternative? Then homemade popsicles are ideal, they are super healthy and delicious! By the way, making your own ice cream is not at all difficult and fun!

They are perfect for a hot day in the garden or as a dessert at the barbeque. Bet it will put a big smile on the face of the children and adults? ;-)

Ingredients

(for about 8 ice creams)

  • 1 mango: here you choose what you like (250 grams of strawberries, pear, orange...)
  • Green tea , loose or in bags
  • 150 ml of water
  • Juice of 1 lemon and the zest
  • Honey or agave (if you are vegan, agave is an ideal option)
  • Edible flowers or other decoration (pansies, hibiscus..)
  • Some mint leaves

Preparation

The nice thing about making popsicles yourself? You can experiment with flavors and fruit. A fun activity with the kids!

Green tea popsicles

  1. Rinse the edible flowers first. Remove the leaves or keep them whole. You don't necessarily have to add this, but the flowers provide a special effect.
  2. Cut the mango into small pieces, small enough to fit in the ice molds. Don't like bits? Then put the mango together with the tea water and lemon juice in the blender.
  3. Boil water and add the water to a carafe with 3 tea bags.
  4. Add a little agave or honey to the tea water to taste.
  5. Put a few pieces of mango, mint and flowers in the molds.
  6. Pour the tea water into the moulds.
  7. Put the popsicles in the freezer for a few hours and then they're ready!

During the sultry summer evenings, some refreshment is always welcome. I wish you a nice, sunny week!
Regards, Ronnie
