I often hear that people buy 'healthy' snack bars in the supermarket. The bars are there for the taking and in recent years the range has only increased.
If you thoroughly analyze the ingredients list of these bars, it turns out that they are not that healthy after all. Usually they are full of hidden sugars and preservatives. You can no longer call it healthy snacking…
You know by now that I'm not a fan of ready-made snacks or meals. That's why I got to work in my kitchen for you and put together this delicious recipe for healthy matcha snack bars. These snack bars give you energy in a healthy way.
Much healthier and also really delicious! Delicious for after exercise, as a quick breakfast, on the go or as a healthy snack in the kids' lunch box. Because of the sweetness of the date, everyone likes them, small or big! :-)
Ingredients (for about 8 bars)
- 1 tablespoon matcha powder (keep some extra aside for topping)
- 1 ¼ cup dates (chopped)
- ½ cup almond nuts
- ½ cup cashews
- ¼ cup toasted seeds
- 1 teaspoon vanilla extract
- 2 tablespoons cocoa chunks
- ¼ cup unsweetened coconut flakes
Preparation
This is very simple!
- Add the dates, almonds, cashews, seeds, vanilla extract and two teaspoons of matcha tea together to a mixer. Mix until it is a smooth mass and sticks together well. If the mixture falls apart quickly, add some more dates.
- Add the cocoa pieces and mix.
- Fill a baking tin with baking paper and add the mixture.
- Put the mixture in the freezer for at least 30 minutes (take them out when you feel they are firm enough).
- Now you can easily remove it from the baking tin. Cut it into equal strips.
You can keep these bars in the refrigerator for about 7 days. Ideal if you are looking for a quick snack or breakfast and still want to eat healthy.
