Matcha tea is now well known to most people who are busy with healthy, energetic food . But the fact that you can also prepare delicious recipes with this green tea is much less so. However, it lends itself perfectly to mixing and processing in tasty recipes.

Below we present you a starter, main course and dessert in which matcha is used as an ingredient.

Simple to prepare and delicious.

Horse mackerel ceviche

Appetizer

Ceviche of horse mackerel, avocado and radish

Ingredients

  • 2 horse mackerels, fillet
  • 40 g lime juice
  • 40 g lemon juice
  • 50 g red onion, finely chopped
  • 3 g chilli, finely chopped
  • 145 g avocado flesh
  • 6 g red wine vinegar
  • 1 teaspoon of matcha tea
  • 10 g yogurt
  • juice 1/2 lemon
  • 12 g coriander
  • 20 grams of olive oil
  • 12 to 15 radishes, cut into strips
  • pepper and salt
  • olive oil, extra virgin

Preparation

Mix the lime juice with the lemon juice, red onion and chilli in a bowl. Season the whole thing with salt and pepper. Add the skinned mackerel fillets here. Then let it marinate for 30 minutes. Remove the fish from the marinade and season again with salt and pepper. Place the fish on the plate, drizzle with olive oil and add the radishes.

Mix the avocado flesh with the other ingredients until smooth. Strain this and apply a few swirls with a piping bag. Enjoy!

Matcha wok with vegetables

Matcha wok with vegetables

Ingredients

  • Buckwheat noodles
  • Grape seed oil
  • Kale
  • Green peas
  • Edamame beans
  • 1 teaspoon matcha powder
  • 1 teaspoon soy
  • 1 teaspoon of honey
  • 2 teaspoons tahini sesame paste
  • sesame seeds
  • chives
  • olive oil
  • pepper and salt

Preparation

Matcha powder is also ideal to use as a seasoning in woks. Boil a portion of buckwheat noodles for 5 minutes.

Heat some grapeseed oil in a wok, add chopped kale, green peas and edamame beans.

Season with some pepper and a teaspoon of matcha. Wok for a few minutes with a tahini-soy sauce (1 teaspoon soy, 1 teaspoon honey and 2 teaspoons tahini sesame paste).

When serving, add some sesame seeds and fresh chives and you're done.

An easily digestible, super healthy main dish.

Matcha tea panna cotta

Matcha tea panna cotta

Ingredients

  • 250 ml whole milk
  • 7 grams of gelatin
  • 500 ml fresh whipped cream
  • 50 grams of sugar
  • 1 tablespoon of matcha powder
  • A handful of raspberries

Preparation

Pour the milk into a bowl, sprinkle the gelatin sheets on top and wait 5 minutes. Then heat this until the gelatin is completely dissolved, but make sure it does not boil.

Then you put 1 tablespoon of whipped cream and matcha in a bowl and beat it into a paste.

Then add this to your gelatin and the milk, with the rest of the whipped cream. Add the sugar and keep stirring until it is dissolved.

Pour the preparation into small bowls and let it set. This may take a few hours, so you'll need to be patient.

Before serving, dust with icing sugar and raspberries.
