Marzipan balls, that's super delicious. And actually it is still quite healthy if we omit the sugar. :-)

That's why I started looking for a healthier alternative to the sugary marzipan. These energy balls with almond and cocoa are just as tasty as the real marzipan, you hardly taste any difference.

And the big advantage? They are ready in 1-2-3! A tasty snack to take to work, or to surprise your kids with.

The ingredients for these delicious energy balls

  • 200 grams of almond flour
  • 1 egg
  • Add a few drops of almond essence, to taste
  • Add a few drops of vanilla extract, to taste
  • Sweetener to taste (e.g. Zusto, Canderel…) (The amount depends on your personal preference, but don't overdo it. The vanilla extract and almond flour already give you a delicious, soft taste. Start with a tablespoon and add if desired an extra spoon.) Do you not want to use sweetener? Then you can replace this with dates.
  • 1 teaspoon of matcha
  • Some cocoa powder without sugar to roll the balls in

How are you?

  • Mix all the ingredients with a food processor.
  • Shape it into a sausage and wrap it in plastic wrap.
  • Put the wrapped sausage in the fridge for at least an hour, so that the dough hardens.
  • Then you can roll balls or make discs, that's up to you. :-)
  • You can then roll the balls in cocoa powder for extra flavour.

Lo and behold, those delicious energy balls are ready! They are sure to please young and old alike.
